<image:title>Workshops - Hands On Natural Building - Lead Instructor: Greg Allen, Co-Founder of Mud Dauber School of Natural Building</image:title>
<image:caption>Greg apprenticed at the Cob Cottage Company (with Ianto Evans and Linda Smiley) in 2008, and left that experience feeling passionate about spreading the knowledge and joy of natural building to others. He began teaching workshops in central North Carolina in 2009, and then bought rural land and started a homestead with Danielle in 2014. This is when we officially began teaching under the Mud Dauber School name, and at our current campus. Greg was born and raised in Syracuse, NY. Favorite childhood memories involve camping in the Adirondack Mountains, cross-country road trips with his family, drawing/designing tiny living spaces, building with Legos, and endlessly making art. He formally studied Industrial Design at Syracuse University. While there, he fell in love with the process of design, enjoyed pottery classes, and interned at a small organic farm. All of these things were formative in leading him to natural building. In addition to instructing workshops, Greg has been involved in contract work in the Central NC area since 2010. He has had his NC General Contractor’s license since 2017. In addition to conventional work, he has built a handful of straw bale residences, many naturally-built backyard studio spaces, and a variety of other custom design/build projects. His work is featured at the Museum of Life and Science in Durham, Sanctuary Farm, and at many local private residences. He also regularly presents on natural building at local libraries and events.</image:caption>

<image:title>Workshops - Grafting Apple Trees - Meet your Instructors: Dorsey & Brittany Kordick</image:title>
<image:caption>Dorsey Kordick is one-half of the dynamic duo behind Kordick Family Farm in Westfield, North Carolina, where two persistent souls stay busy proving you can grow heirloom apples organically on a commercial scale, even in the Southeastern United States. Early in her orcharding career, Dorsey spent time in England, learning how to make traditional ciders, intending to found a cidery but has since found she enjoys growing fruit more than the business of fermenting it. She has personally grafted all but a handful of the apple and pear trees grown at Kordick Family Farm. Dorsey is such a stickler for good grafting technique, it is sometimes impossible to discern the graft union were she has fitted together varietal scionwood to rootstock. Besides grafting, Dorsey’s favorite orcharding tasks include any that require a good climb in a large apple tree. Brittany Kordick is the other half of the dynamic duo behind Kordick Family Farm. Brittany’s official title is orchard manager, but “Jill of all trades” is more fitting, given her duty roster and devotion to multitasking. Because Brittany is a glutton for punishment, always looking to master skills that intersect with farming needs, in recent years she has pursued education in the electrical and HVAC fields, as well as enology and viticulture. A particular interest is applying winemaking practices and principles wherever they can elevate cidery and orchard management, and she recently became accredited as a Cider Guide and Pommelier through the American Cider Association. Brittany tries to keep things on a professional level always, but finds it hard not to get attached to her trees.</image:caption>

<image:title>Workshops - Herb Weekend - Nervous System Support in these trying times</image:title>
<image:caption>Instructor: Henrietta Cummings Our nervous system is one of the primary ways we digest and respond to the world around us, especially to what we perceive as stressful. While much of our nervous system responses are programmed in childhood, we also have the ability to influence and reprogram this system through our diets, lifestyles, thought processes and the environments we create (home, relationships, work, etc.) as adults. Nervous system resilience is essential for navigating life’s ups and downs and the pervasive stress of modern society. In this class, we will explore the basics of nervous system function, its role as a protective feedback mechanism in the body, and how chronic stress impacts this system, leading to a cascade of potential symptoms and conditions if left unchecked. We will discuss herbs, practices and other ideas for keeping the nervous system operating from a parasympathetic state as much as possible, why that is important for overall health/wellness, and how to care for oneself when stress is omnipresent.</image:caption>

Get ready to engage all your senses and work with some common herbs at the height of their growing season to learn proper harvesting and blending techniques based on taste, purpose and intention. We will also go over brewing techniques when using different parts of the plants (flowers, leaves, roots). <image:title>Workshops - Fermenting, Food Preservation, Home Brewing: 5 Workshops - Mead Making: The Art of Home Brewing</image:title>
<image:caption>Instructor: Dr. Rebecca Schwendler Drink of ancient heroes and modern wizards, mead is known archaeologically to be at least 5,000 to 9,000 years old and is found around the world. That antiquity makes mead one of the first alcoholic beverages our diverse ancestors consumed. Unlike wine, beer, whiskey, rum, vodka, chicha, and other alcohols made with domesticated plants, mead can be created from completely wild, naturally occurring ingredients. As a result, mead is a very approachable and personable drink that is easy to make and infinitely adaptable to personal taste and experimentation. This workshop will begin with a brief history of mead and its appearance in archaeology and ancient and modern literature. Next will come a summary of the great diversity of mead varietals that can be created, and a tasting of many different flavors made by the workshop leader. During the heart of the workshop, participants will start their own half-gallon batches of mead using pure honey and water, and optionally flavored with one or more flowers, herbs, fruits, and/or woods of each participant’s choosing. The workshop is led by archaeologist and farmer Dr. Rebecca Schwendler.</image:caption>

<image:title>2026 Workshops - Success with Herbs</image:title>
<image:caption>Henrietta Cummings is a local Herbalist. She has been studying medicinal herbs since the 1970s and wildcrafting and growing herbs using organic methods for almost as long. Her passions are being with the plants, sharing herbal knowledge through teaching classes and workshops, teaching individuals through hands-on study on the farm, and cultivating a wide variety of culinary and medicinal herbs. She plants at-risk and endangered herbs to help restore them in the wild, native herbs to attract a wide variety of local pollinators, and herbs from around the world to offer a large variety of medicinal herbs and to help these herbs continue to thrive.</image:caption>

<image:caption>Few garden designers have Frank’s breadth of education or experience: he studied horticulture under the late JC Raulston, namesake of NCSU’s arboretum and learned design from Tracy Traer, Denis Wood and Will Hooker, who has had several installations at the NC Museum of Art. Frank is also a stonemason, carpenter and sculptor; he learned stonemasonry from the late Arch Haithcock of Blue Ridge Stone, learned carpentry from Green builder Mark Marcoplos and apprenticed with Raleigh’s first organic landscaper, Bob Mulder. In his youth Frank farmed organic vegetables in Granville County, picked oranges in Spain and worked as an IPM scout for tomato farmers in SC. He restricts his garden design/plant/build business, called Cottage Garden Landscaping, to what he calls the “bungalow neighborhoods” of inner city Durham and yet manages to stay booked up as much as 6 months in advance. He uses his knowledge to create innovative and beautiful gardens that don’t need babying. Frank has written about gardening for since 1990 in the N&O, Herald-Sun, Independent Weekly, Carolina Gardener, Backyard Poultry, Horticulture and many other magazines. He gardens with his wife, Chris Crochetiere, at Bayleaf Cottage, their home in Durham.</image:caption>

<image:title>2026 Workshops - Natural Building</image:title>
<image:caption>Greg is the co-founder and lead instructor at the Mud Dauber School of Natural Building in North Carolina. He apprenticed at the Cob Cottage Company (with Ianto Evans and Linda Smiley) in 2008, and left that experience feeling passionate about spreading the knowledge and joy of natural building to others.

He is a landscape architect with more than 35 years of professional experience. However, Dan’s real passion has always been working with wood, stone, cement, plants and glass as it has been since early in life. It was and is the desire to go further in scale and complexity with these materials which led to pursuing a degree and license in landscape architecture.</image:caption>

<image:title>2026 Workshops - Grafting Apple Trees - Meet your Instructors: Brittany & Dorsey Kordick</image:title>

<image:caption>Faith Eyler founded FAE Designs in 2022 with a love for creative expression and a desire to live self-sufficiently. FAE Designs uses traditional hand-craft techniques to produce durable life-long pieces. Another part of our mission is to invest back into the community by sourcing our materials from local small businesses; and of the best quality possible. Each made with care and passion. My vision is for FAE Designs to grow and become a staple in our community. To honor and pass down the craft and traditions of leather work. To see people enriched with the knowledge of how to steward our natural resources. See more at: faedesigns_ (instagram) and faedesignshop (facebook)</image:caption>

<image:title>2026 Workshops - Natural Building - Lead Instructor: Greg Allen, Co-Founder of Mud Dauber School of Natural Building</image:title>
